Ingredients

  • 1 cup cooked quinoa

  • 1 cup roasted chickpeas

  • 1 large sweet potato, cubed

  • 2 cups mixed greens

  • 1 avocado, sliced

  • 1/2 cup shredded purple cabbage

  • 1/4 cup pumpkin seeds

  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 1 tbsp maple syrup

  • 1 clove garlic, minced

  • Water to thin

Instructions

  • Preheat oven to 400°F. Toss sweet potato with oil, salt, pepper. Roast 25 minutes.
  • Cook quinoa according to package directions.
  • Make tahini dressing: mix tahini, lemon juice, maple syrup, garlic. Add water to thin.
  • Assemble bowls: greens first, then quinoa, sweet potato, chickpeas, avocado, cabbage.
  • Drizzle with tahini dressing, sprinkle pumpkin seeds on top.
  • Season with salt and pepper. Serve immediately.
