Ingredients

  • 4 salmon fillets (6 oz each)

  • 2 lemons, sliced

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp dried parsley

  • 1 bunch asparagus, trimmed

  • 1 lb baby potatoes, halved

  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss baby potatoes with 1 tbsp olive oil, salt, pepper. Roast 15 minutes.
  • Season salmon with salt, pepper, thyme, rosemary, and garlic.
  • Push potatoes to sides of pan, place salmon in center.
  • Arrange asparagus around salmon, drizzle with remaining olive oil.
  • Top salmon with lemon slices.
  • Bake 12-15 minutes until salmon flakes easily.
  • Garnish with fresh parsley and serve.
