Ingredients

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 can chickpeas, drained and roasted

  • 1 large sweet potato, cubed

  • 1 red bell pepper, sliced

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup kalamata olives

  • 1/2 cup crumbled feta cheese

  • 3 tbsp olive oil

  • 2 tbsp lemon juice

  • 1 tsp dried oregano

  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F (200°C).
  • Cook quinoa in water according to package directions, about 15 minutes.
  • Toss sweet potato with olive oil, salt, and pepper. Roast 25 minutes until golden.
  • In the same pan, add chickpeas seasoned with cumin and paprika. Roast 15 minutes.
  • Prepare tzatziki: mix Greek yogurt, grated cucumber, garlic, dill, lemon juice.
  • Assemble bowls: quinoa base, topped with roasted veggies, chickpeas, fresh cucumber, tomatoes, olives.
  • Drizzle with lemon-oregano vinaigrette and sprinkle feta cheese on top.
