2 cans black beans, drained and rinsed
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 tsp cumin
1 tsp smoked paprika
1/2 tsp chili powder
8 small corn tortillas
2 avocados, sliced
1/2 cup crumbled cotija cheese
Fresh cilantro and lime wedges
3 Roma tomatoes, diced (for salsa)
1/4 red onion, finely diced (for salsa)
1 jalapeño, minced (for salsa)
Juice of 1 lime (for salsa)
Salt to taste
Instructions
- Combine tomatoes, onion, jalapeño, lime juice, salt for salsa. Set aside.
- Heat olive oil in a skillet over medium heat. Sauté onion 3 minutes until softened, add garlic and cook 30 seconds.
- Add cumin, smoked paprika, chili powder. Stir 30 seconds until fragrant.
- Add black beans, cook 5 minutes, mashing lightly with a fork for creaminess.
- Warm tortillas in a dry skillet 30 seconds per side.
- Fill tortillas with beans, salsa, sliced avocado, and cotija cheese.
- Garnish with fresh cilantro and serve with lime wedges.
