One Pan Lemon Herb Salmon

4 salmon fillets (6 oz each)
2 lemons, sliced
3 tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried parsley
1 bunch asparagus, trimmed
1 lb baby potatoes, halved
Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss baby potatoes with 1 tbsp olive oil, salt, pepper. Roast 15 minutes.
- Season salmon with salt, pepper, thyme, rosemary, and garlic.
- Push potatoes to sides of pan, place salmon in center.
- Arrange asparagus around salmon, drizzle with remaining olive oil.
- Top salmon with lemon slices.
- Bake 12-15 minutes until salmon flakes easily.
- Garnish with fresh parsley and serve.
