1 cup quinoa, rinsed
2 cups water
1 can chickpeas, drained and roasted
1 large sweet potato, cubed
1 red bell pepper, sliced
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives
1/2 cup crumbled feta cheese
3 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cook quinoa in water according to package directions, about 15 minutes.
- Toss sweet potato with olive oil, salt, and pepper. Roast 25 minutes until golden.
- In the same pan, add chickpeas seasoned with cumin and paprika. Roast 15 minutes.
- Prepare tzatziki: mix Greek yogurt, grated cucumber, garlic, dill, lemon juice.
- Assemble bowls: quinoa base, topped with roasted veggies, chickpeas, fresh cucumber, tomatoes, olives.
- Drizzle with lemon-oregano vinaigrette and sprinkle feta cheese on top.
